Avatar Buns




Makes 20, 120 calories each

Mung Bean Filling
200g mung bean, soaked over night
30g sugar (omit if you like)
2 tablespoons of hot water for mashing

Natural Blue Colouring
10g blue pea flowers
125ml hot water

Dough Ingredients
200g bread flour
150g brown rice flour
50g milk powder
10g yeast
1/3 cup vegetable oil



  1. Add sugar to the mung bean and steam for 30 minutes. While it is still hot, mash with the back of a spoon. Use some water to soften it if it is easier. If you have a food processor, you can also grind it.
  2. Boil the blue pea flowers in water under low heat. When the solution has cooled, sieve the flowers and liquid and press to get as much colour out as possible. Let the blue solution cool down to room temperature before use.
  3. Mix the dry ingredients of the dough (all except vegetable oil) and make a hole in the centre. Pour blue solution and vegetable oil in and stir. Knead into a dough, and set aside to rise for 30 minutes.
